Walnut Garlic Kale Salad

Oops! I forgot the sweetener for the dressing. It still turned out pretty good though! I drizzled some maple syrup over the top of our salads and mixed it in. Honestly, though, I couldn’t taste a difference! It has a very strong garlic/tamari taste. Sutton thinks it was a little too salty. I think 1 tablespoon of tamari would be enough.

They didn’t have any fresh figs at the store, so I ended up with dried turkish figs. I also don’t like olives, so those were out! I added some shredded carrot because we had some extra. I also added walnuts! Now the salad was named “walnut garlic salad” but I think there was a typo because “walnuts” was not an ingredient in it! Oh, and I also forgot to get the zucchini when I was shopping. This is one recipe, I made many, many mistakes on. Luckily it still turned out tasty.

The chickpeas and nuts make this salad pretty filling, which is nice! This is the first time we’ve had a kale salad. I liked using red kale because I think it has a milder taste than the curly green or lacinato kale.

Ingredients

  • 2 tablespoon mustard
  • 2 tablespoon tamari
  • 6 tablespoons almond milk (or water)
  • 1 garlic clove
  • 2 tablespoon miso
  • 8 cups red kale, finely chopped
  • 1 cup shredded carrot
  • 1 cup chickpeas
  • 5 dried Turkish figs, chopped
  • 1/2 cup walnuts

Instructions

  • 1. Make the dressing by blending the mustard through miso together. Pour the dressing on the kale and massage it into the leaves. Then add the carrot through walnuts, mix well and enjoy!
