Honestly, we don’t do a lot of breakfast food. We drink large, yummy green smoothies every morning. However, we went to a vegan cooking class not too long ago, and learned how to do a tofu scramble. I really like that it’s fairly simple and versatile. You could use just about any veggies you wanted like spinach, mushrooms, etc. I also think this would be good with black beans.

It’s not a “wow” kind of dish, but it is satisfying and healthy. I think it would also make a good filling for a burrito. Sutton agrees with me on this one. It was kinda hard for us to rate it because we don’t have many breakfast foods to compare it to.

We actually ate it for lunch!

Ingredients

  • 1 1/2 pounds extra firm tofu, crumbled
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 teaspoons curry powder
  • 1 tablespoon soy sauce
  • Salt & pepper
  • 1 tablespoon coconut oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, chopped
  • 3 serrano chiles, seeded and sliced thin
  • 2 garlic cloves, minced

Instructions

  • 1. With paper towels, press some of the water out of the tofu. Then crumble it with your hands into a large bowl. Add cumin, turmeric, curry powder, and soy sauce. Add salt and pepper to taste.
  • 2. Heat a large nonstick skillet or wok over medium high heat. Add coconut oil. Then add peppers, onions, and garlic. Sauté until the peppers and onions are almost done, about 5 minutes. Then add the tofu mixture and cook about 5 minutes, stirring often.
  • 3. Serve with toast and salsa.
