Super tasty soup!! This is the first time we’ve had kale in a soup and it’s really yummy. This soup is healthy, hearty and delicious!
It’s definitely tangy from the tomatoes and tomato paste. The paste makes it a little thicker than an average broth soup. You can also taste a hint of the rosemary, which I LOVE! The only change I made was to use a box of Pomi tomatoes instead of a can.
This was so simple to make. I really recommend it! Even if you’ve never had kale before. I think this would be a good place to start. Soak up the soup with some toasted bread. Enjoy!

Ingredients
- 2 tbsp. olive oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 6 cups vegetable broth
- 2 tbsp. fresh rosemary, finely chopped
- 1 box Pomi crushed tomatoes
- 1 14 oz. can red kidney beans, drained
- 1/4 cup tomato paste
- 6 cups sliced kale
- Juice of 1 lemon
- 1 tbsp. cayenne pepper sauce (adjust to your spice preference, or omit entirely if not your thing)
Instructions
- 1. Heat olive oil in large saucepan or stock pot over medium heat. Add onion and sautee for about five minutes, or until softened. Add garlic and sautee an additional minute or until fragrant. Add remaining ingredients, stir until tomato paste is blended in, and heat to a simmer. Continue simmering about 20 minutes or until kale is tender.
- 2. Serve with toast!
