Zucchini & Black Bean Veggie Burgers

I’ve been trying to find veggie burger recipes that Sutton and I like, and it’s a struggle. Most often, the texture is too mushy, and if you put it on toasted bread, it will become a messy goo squishing out the sides. No fun! Not to mention during cooking, they don’t want to stick together, making a mess in the pan.

This particular recipe has some potential, but is seriously lacking flavor. I will say that I subbed out this steak seasoning for Trader Joe’s Everyday Seasoning thinking it would be similar. I could be way off base, but it seems that the 1/2 a teaspoon of seasoning that the original recipe called for, is not going to be enough to season 4 burgers. I used 1 teaspoon and still ended up in blandville.

Another item to bring up is that these did, in fact, turn out to be mushy. She says to let the ingredients sit for a while. I think they could stand to sit for an hour or maybe overnight, like she mentioned doing before. I let it sit about 10 minutes and that was definitely not long enough.

In order to add some flavor, we used salsa. It was still only around a 2 on the rating scale.

Ingredients

  • 1 cup shredded Zucchini
  • 1 cup Black Beans (rinsed and drained)
  • 6 tablespoons Ground Flax
  • 1 teaspoon Trader Joe's Everyday Seasoning
  • 1 tablespoon Coconut Oil
  • 1 large tomato a handful of baby spinach
  • 4 Ezekial's english muffins
  • Salsa

Instructions

  • 1. In a medium bowl add all ingredients.
  • 2. Mash together with a fork.
  • 3. Let it sit to let the flax gel everything together.
  • 4. Pan fry until golden on each side.
